Broccoli Chicken (Edwina L.)
  • 1 (6.9 ounce) package of Rice-A-Roni Chicken Flavor
  • 2 tablespoons margarine or butter
  • 1 tablespoon dried basil
  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 tomato, chopped
  • 1 cup (4 ounces) shredded mozzarella cheese

Sauté rice-vermicelli mix with butter in large skillet on medium heat until golden brown.

Add 2 cups water, special seasonings (comes in Rice-A-Roni), and basil. Bring to a boil on high heat. Place chicken on rice. Cover; reduce heat to low. Simmer 10 minutes.

Stir in broccoli and tomato. Cover; simmer 10 minutes or until rice is tender and chicken is no longer pink inside. Sprinkle with cheese. Cover and let stand 3 minutes.

Personally, I use parmesan cheese and let each person put what they want on their individual serving instead of the mozzarella.
Easy White Chicken Chili (Kathleen B.)
(Great for dutch ovens)

  • 2 cans Navy Beans
  • 2 large cans chicken breast
  • 2 cans chicken broth
  • 1/2 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cilantro
  • small onion (chopped)
  • 4 oz can chopped green chilies
  • 4 oz chopped jalapenos
  • 2 cups shredded Monterey Jack cheese

Mix all except cheese together in large saucepan or dutch oven. Heat over medium heat until flavors are blended and mixture is hot throughout. Before serving, stir in cheese until melted. Serves 6.
Friendship Pizza (TK)
  • 1 pkg slice and bake sugar cookie dough
  • 8 oz. cream cheese
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • Have each girl brin gone piece of fruit (any kind)

Slice cookies in 1/4" slices or less and lay on greased pan close enough together so they bake into a solid pastry. Bake at 350 degrees for 8 to 10 minutes till light brown. Allow to cool. Beat together cream cheese, sugar, vanilla and spread over the cookie crust. Cut, slice, or prepare any variety of fruit that the girls bring (it can be fresh or canned or any combination). Sprinkle the fruit on top of pizza, slice and serve.
S'MORES GIFT JARS (Scouting Web)
  • Layer in a large wide mouthed 1 quart jar:
  • 1 1/2 Cups of Graham Cracker Crumbs     (about one sleeve of crackers, crushed)
  • 1 1/2 Cups miniature marshmallows
    (substitute some holiday Peeps for a cute variation and line the jar with them facing out, use 8 peeps and about 1/2 cup miniature marshmallows)
  • 1 1/2 Cups chocolate chips or mini  Hershey Kisses or M & M's
  • 1/3 Cup Brown Sugar

INSTRUCTIONS
Place on Jar Label:
S'mores in a Jar
Combine the contents  with 1/2 cup of melted butter and 1 tsp. of vanilla.
Press mixture into a 9 inch square baking pan  and press firmly (if using Peeps, place on top).  Bake at 350 degrees for 15 minutes. 
Cool completely. Cut into bars. Yield 12 bars.
